I undercooked it
I increased the Smoker internal temperature to about 230 degrees F aiming to get the Brisket temperature up to 205 degrees F for the last 30-minutes to break down the Collagen. The result was WONDERFUL! Everyone who tried it LOVED it
does not deliver the basics and cuts corners at every step.There was no preparation at all on the cabinet surfaces. Just sprayed paint over dust
imprint of plastic covering was embedded in the wet paint.I can go on but the pictures should tell the story.I am now having to pay another company to start over
